Strawberry Basil Milk w/ Boba and Sea Salt Cream

Strawberry Basil Milk w/ Boba and Sea Salt Cream

Ingredients

Boba
  • 1 cup boba
  • 1 cup water
  • 1 cup brown sugar
Strawberry Syrup
  • 3 cups strawberries (frozen when not in season, fresh when in season)
  • 2 teaspoons freshly squeezed lemon juice
  • 2 tablespoons sugar or honey
  • 2 tablespoons basil, finely minced
  • 4 cups your milk of choice
Sea Salt Cream
  • 3/4 cup heavy cream
  • Pinch of sea salt flakes
  • 1 teaspoon sugar

Instructions

Boba
  1. Cook boba according to package directions. 
  2. Drain and rinse in cold water. In a small saucepan over medium heat add the water and brown sugar. Cook until all the sugar is dissolved and simmer for 5 minutes. 
  3. Add the simple syrup to the cooked boba, mix to coat each boba and set aside.
Strawberry Syrup
  1. In a medium pot over medium-high heat, add the strawberries and cook until the strawberries start to break down (the cook time will vary depending on if you use fresh or frozen strawberries). Use a wooden spoon to break up the strawberries into smaller chunks. Turn off the heat. 
  2. Add the lemon juice, sugar/honey, and basil, stir to mix together. Taste to check if sweetness is to your liking, add 1 tablespoon at a time if you want it sweeter.
Sea Salt Cream
  1. In a small mixing bowl add the heavy cream, sea salt, and sugar. Using an electric hand mixer whip the cream starting at low speed gradually increasing it to a medium speed. Stop mixing when your cream is thicker in consistency but still pourable, do not mix to make whipped cream.
  1. Add a quarter of the boba and the strawberry basil syrup to the serving cup of your choice. Pour in a cup of your choice of milk and stir together. Top it off with some sea salt cream. Enjoy!s
