Pandan & Basil Mochi Waffle

The rich fragrant Pandan and Basil leaves may be the star of this waffle but the soft chewy consistency and crispy outside waffle really adds a 10/10.

Ingredients

  • 1 cup coconut milk
  • ¼ cup oat/soy milk
  • 4 (5-inch) pandan leaves
  • 10 basil leaves
  • 2 tablespoons palm sugar, packed
  • 1 tablespoon flaxseed meal
  • 2½ tablespoons water
  • 1 cup glutinous rice flour
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Plug in your waffle maker and set to max temperature.
  2. In a small saucepan heat the coconut milk, oat/soy milk, and pandan leaves over medium-low heat. Let simmer for 10 minutes. Mash up the basil leaves to a paste with a mortar and pestle. (If you do not have a mortar and pestle you can steep 15 basil leaves in the liquid after it is done heating). Take the saucepan off the heat and add in the basil paste and palm sugar, stir together. Set aside to cool to at least room temperature.
  3. While the wet ingredients are cooling, mix the flaxseed meal and water together in a small bowl. Let this sit for at least five minutes to thicken.
  4. In a large mixing bowl add the glutinous rice flour, all-purpose flour, baking powder, and salt. Whisk together to combine.
  5. When your wet ingredients are cool enough, carefully pick out all the pandan leaves (and basil leaves if you steeped them). Then add in the flaxseed mixture and stir together. Add the wet ingredients to the dry ingredients and fold it in, being mindful not to overmix the batter.
  6. Lift open your waffle maker and lightly spray oil or butter the inside. Scoop half of the batter and pour it directly onto the center of your waffle maker. Close the waffle maker and turn it 180 degrees. Cook for 3-4 minutes, or until your waffle maker says it is “ready” with the green light on. Serve immediately with some fresh tropical fruits and whip cream on top.

Notes:

·     You can find pandan leaves frozen at your local Asian grocery store.
