Miso & Basil Buttery Cod

This sauce is full of umami and rich flavors from the miso but is balanced with the yuzu extract and mirin. So delicious, quick, and easy!

Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon white miso paste
  • 2 teaspoons honey
  • 2 tablespoons mirin
  • ½ teaspoon yuzu extract
  • 2 tablespoons basil, finely minced
  • 1 clove garlic, grated
  • 8 ounces cod, divided in half
  • Lemon wedges for serving

Instructions

  1. For Frying: In a medium frying pan over medium heat, add the butter and melt completely. Then add the miso, honey, mirin, yuzu, basil, and garlic. Let this simmer for a minute while constantly stirring with a spatula to break up the miso paste. Then add the slices of cod to the pan and fry each side for two minutes. (If your cod slices are thicker or larger then you will need to fry it a little longer to cook it through but be careful not to overcook your fish). As each side is frying baste the fish with the buttery sauce.
  2. For Broiling: In a small frying pan over medium low heat add the butter, miso, honey, mirin, yuzu, basil, and garlic. Let this simmer for a minute until the miso is fully mixed in. Lightly coat your cod with the sauce and place in a toaster oven/oven until the tops become a deep brown with a little charring for about 5-7 minutes. The internal temperature should reach 145 degrees Fahrenheit for safe consumption. Miso burns easily so do not broil with a bunch of extra sauce on your fish. You can top the cod off with extra sauce after it is done broiling.
  3. Serve up your cod with a side of rice and veggies (or whatever you prefer!) immediately and drizzle some of the leftover sauce right on the fish. Squeeze some fresh lemon on top and enjoy!

Notes:

·     Always check your fish fillets for any bones! Take them out easily using fish tweezers.

·     If cod is not available to you this sauce will taste good with salmon and sea bass as well!
