Baked Cherry Tomatoes & Feta Pasta

Here's our take on the popular TikTok baked feta and cherry tomatoes pasta recipe! It's a perfect quick and easy meal for any day!

Ingredients

  • 3 cups cherry tomatoes
  • 1 cup white corn
  • 5 cloves garlic, roughly chopped
  • 1 Cipollini onion, sliced
  • 1 sprig, rosemary
  • 1½ teaspoons oregano
  • ½ teaspoon black pepper
  • ½ cup extra virgin olive oil, divided
  • 8 ounces block feta cheese
  • 8 ounces gemelli pasta, reserve ½ cup pasta water
  • ¼ teaspoon red pepper flakes
  • Handful of fresh basil

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a 9-inch cast iron skillet, add the cherry tomatoes, corn, garlic, onion, rosemary, oregano, black pepper, and ¼ cup of olive oil. Mix together with a wooden spoon until all ingredients look well coated with the olive oil and herbs.
  3. Use the wooden spoon to push aside the ingredients to make space in the center of the pan for the block of feta cheese. Place the feta in the center and evenly pour the rest of the olive oil over the feta and other ingredients in the pan. Bake in the oven for 35-40 minutes, or until the feta block looks browned on top and cherry tomatoes wilted/bursting.
  4. While that is baking you can start boiling a pot of water to cook the pasta. Cook the pasta according to package directions to be al dente. Reserve ½ cup of the pasta water before draining and rinsing with cold water.
  5. When your cherry tomatoes and feta are done baking, use the wooden spoon to smash down the block of feta and mix all the ingredients in the pan together. Add the cooked pasta and stir together. If it looks a little too dry for your liking you can add ¼ cup of the pasta water at a time and stir together to thicken the sauce. Top off your pasta with red pepper flakes and fresh basil. You can simply rip the basil to smaller pieces with your hands and sprinkle on top. Enjoy!
