Chocolate Citrus Basil Granola w/ Pecans

Chocolate and basil go so well together and tastes uber yummy with toasted pecans when mixed together to make your next favorite granola.

Ingredients

  • ¼ cup honey or maple syrup
  • ½ cup carob chips, melted
  • 6 tablespoons coconut oil, melted if solid
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Zest of 1 orange
  • 3 cups rolled oats
  • 1 ½ cups raw pecan halves
  • 20 basil leaves, finely minced
  • ½ cup plantain chips
  • ½ cup dried figs, roughly chopped
  • ½ cup carob chips

Instructions

  1. Preheat oven to 330 degrees Fahrenheit.
  2. In a small mixing bowl add the honey/maple syrup, melted carob, coconut oil, vanilla extract, and salt. Stir together until all ingredients are combined.
  3. In a large mixing bowl add the oats and pecans. Then pour all the liquid mixture from the previous step onto the oats and pecans. Mix altogether with a wooden spoon until each oat and pecan is coated. Add the orange zest and mix together.
  4. Line your baking sheet with parchment paper. Then spread the oats and pecan mixture onto the pan evenly. Place in oven and bake for 20-25 minutes, taking it out halfway to mix around. You know when it is ready when the pecans are toasted to your liking (be careful not to burn them!).
  5. Take it out of the oven and add the basil, mix together with a spatula to evenly disperse basil. Spread the granola evenly on the pan and let it cool down completely. If you want your granola to have big clusters, press the granola down with your spatula after mixing the basil in and spreading it evenly, then let it cool like that undisturbed.
  6. When it is completely cooled down it should have crisped/hardened up. Just break it up with your spatula so it is in pieces. Then add the plantain chips, dried figs, and carob chips; mix it together and enjoy! Store leftovers in an air-tight container at room temperature or in the fridge for up to 1-2 weeks.
