Blueberry Banana Basil Muffins

Blueberry, banana, and basil are all ingredients yummy on their own, but combine them together and you can bake up the perfect muffins!

Ingredients

  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1/3 cup unsalted butter, softened
  • ½ cup sugar
  • 1 egg, at room temperature
  • ½ cup milk, at room temperature
  • 1 teaspoon vanilla extract
  • 1 banana, mashed
  • 2 tablespoons basil, chopped
  • 1 cup frozen blueberries

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Place muffin liners into your muffin pan.
  3. In a small mixing bowl add the flour, baking powder, and salt; whisk together.
  4. In a large mixing bowl add the butter and sugar, and cream together on medium speed for about two to three minutes. Add egg, milk, vanilla, banana, and basil in and mix until thoroughly combined.
  5. Add the dry ingredients into the large bowl with wet ingredients and fold together using a rubber spatula, just until all the flour is combined. It is very important you do not overmix the batter! Then add the blueberries and fold it in the batter (two or three folds should be enough).
  6. Scoop the batter equally into each muffin liner. The batter should fill each liner to the top. Place in the oven and then turn the heat down to 400 degrees Fahrenheit; bake muffins for 15 minutes. Then turn the heat down again to 350 degrees Fahrenheit and bake for another five minutes. Take them out of the oven and poke with a clean toothpick to check if they are done. If it comes out clean it is done, if not bake for an additional three minutes and check again.
  7. Cool the muffins in the pan for at least five minutes and then transfer to a wire rack to cool completely before enjoying.
