Apple Cider Infused w/ Fresh Basil

Enjoy a cup of this homemade apple cider infused with fresh basil leaves to kick off the autumn season.

Ingredients

Apple Cider
  • 10 medium apples (assorted), cored and quartered
  • 2 oranges, peeled and quartered
  • 1-inch ginger
  • 3 cinnamon sticks
  • 1 teaspoon whole cloves
  • ½ teaspoon whole all spice
  • ¼ teaspoon ground nutmeg
  • Water, enough to cover apples
  • 2 lemons, freshly squeezed
Basil Simple Syrup
  • 1 cup packed fresh basil leaves
  • 1 cup water
  • 1 cup sugar

Instructions

  1. Add the apples, oranges, ginger, cinnamon, cloves, all spice, and nutmeg into your instant pot. Pour in enough water until it covers your apples, but do not fill over the max fill line of your instant pot. Put the lid on and close, then turn the nob to “sealing.” Pressure cook for 15 minutes.
  2. In the meantime, make the basil simple syrup: in another saucepan add the basil, water, and sugar over low heat. Heat until sugar is fully dissolved, about 3-5 minutes. Take off heat and set aside to steep 10-15 minutes. Then, strain using a small fine mesh sieve and press down on leaves with a spoon until no more liquid drains out of them.
  3. Turn the knob to “venting” when it is done cooking to release the pressure naturally .Do not open the lid unless the float valve is positioned down, indicating that it is fully depressurized. Open lid and stir around with a ladle. In a large bowl, scoop the contents with the ladle into a large sieve over the bowl. Press down on the apples and oranges with the ladle to squeeze out any extra juices. Continue this process until you have done so with all the apple cider.
  4. Pour in half of the basil simple syrup and one freshly squeezed lemon juice into the apple cider and stir with your ladle. Give it a taste and see if it is to your sweetness liking. If you would like it sweeter add more of the basil simple syrup and lemon juice. Serve warm and enjoy!
