Local 808 Frittata

Known for being a cultural melting pot, this Hawai'i inspired frittata includes some favorite local ingredients!

Ingredients:

  • 4 ounces Portuguese sausage, thinly sliced and quartered
  • 6 eggs, beaten
  • ¼ cup heavy cream
  • 1 cup mozzarella, shredded
  • ½ cup garlic chives, 1-inch chopped
  • ¼ cup Thai basil, roughly chopped
  • 2 tablespoons canola oil
  • 1 cup kimchee, roughly chopped
  • 1 cup cooked short grain rice
  • ½ tablespoon gochujang
  • 1 teaspoon sesame oil
  • 2-3-stalks green onion, chopped

Instructions:

  1. Preheat oven to 425 degrees Fahrenheit.
  2. In a medium pan fry sausage over medium heat until fully cooked, about 3-5 minutes. Place sausage on plate with paper towels to soak up excess oil. Set aside.
  3. In a large bowl add eggs and heavy cream. Whisk until well blended. Then, add the mozzarella, garlic chives, Thai basil, and cooked sausage. Whisk to combine and set aside.
  4. Heat an 8-inch oven safe pan over medium heat. Add oil and spread around pan. Then, add chopped kimchee and fry for about 4-5 minutes. Add the rice and gochujang, stir and fry for about 3 minutes until well combined. Mix in sesame oil. Spread out fried rice layer evenly in pan. 
  5. Mix egg mixture one last time and pour directly on top of kimchee fried rice. Let frittata sit on heat until the outer edges slightly cook, about 1 minute.
  6. Place frittata into the oven and bake for 12-15 minutes, or until eggs are puffed and the center jiggles slightly when gently shimmied.
  7. Take out of oven and set aside to cool for 3-5 minutes. Garnish with green onion. Slice and serve right away!

Notes:

• If using a stainless-steel pan make sure to add enough oil to make frittata not stick to pan. • Baking time may vary depending on oven between 7-15 minutes. Make sure to keep an eye on your frittata! • Can’t find Portuguese sausage? Try spam or kielbasa sausage. Honestly, any sausage should do! • The more fermented/sour your kimchee is, the better the fried rice will taste.
