Korean Kimbap w/ Spicy Mix Microgreens

Ingredients:

Kimbap Rice
  • 2 cups uncooked short grain rice or sushi rice
  • 2 tablespoons sesame oil
  • ½ teaspoon kosher salt
Kimbap
  • 4 (8 x 9-inch) seaweed sheets
  • 1 bunch perilla leaves (about 12 leaves)
  • 1-ounce spicy mix microgreens
  • 4 strips danmuji
  • 8 strips seasoned burdock
  • 1 Korean cucumber or English cucumber, batonnet
  • 1 tablespoon sesame oil

Instructions:

Kimbap Rice
  1. Rinse rice in strainer moving rice around with hand until water runs clear. Place rice into medium sized pot and cook according to package directions (rice to water ratio for short grain rice is usually 1:1).
  2. When rice is done cooking transfer to large bowl. Fluff rice around with rice paddle and drizzle in sesame oil and salt. Mix and set aside.
Rolling Kimbap
  1. Lay out sushi mat and place one seaweed sheet on top with shiny side of seaweed down. Spread out an even amount of rice onto seaweed, leaving the top end two inches uncovered. 
  2. Place about two or three perilla leaves on rice arranging it evenly in the middle. Evenly arrange spicy mix microgreens, 1 strip danmuji, 2 strips seasoned burdock, and cucumber strips in the middle to line the roll. 
  3. Then, using the sushi mat tightly roll it all up using both hands. Brush some sesame oil on finished roll. Repeat 3 more times. Slice the finished rolls into even pieces, about ½-inch thick pieces. Serve immediately and enjoy!

Notes:

• Danmuji is a Korean yellow pickled radish. • If you can’t find seasoned burdock substitute it with 1 large carrot, julienne; ½ tablespoon soy sauce, and ½ tablespoon sugar. Stir fry carrots with sauce for about 1-2 minutes.
