Caprese Frittata

Frittatas are the perfect way to start a weekend morning and use up any leftover food items in the fridge. Try out this creamy cheesy caprese style frittata!

Ingredients:

  • 6 eggs, beaten
  • ¼ cup heavy cream
  • ¼ teaspoon salt
  • 1 garlic clove, minced
  • ½ cup gruyere, shredded
  • ¾ cup mozzarella, shredded, and divided
  • ¼ cup packed fresh basil leaves, roughly chopped
  • 2 tablespoons canola oil
  • 2 cups russet potato, shredded
  • 1 heirloom tomato, 1/8-inch thick slices
  • Freshly ground black pepper

Instructions:

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Wash and scrub potato. Shred potato with mandolin or large holed cheese grater. Shred to make 2 cups of shredded potato. Rinse shredded potato well in a sieve and squeeze out excess water. Repeat one or two more times. Place potatoes on paper towels and pat them dry as much as possible. Set aside.
  3. In a large bowl add eggs, heavy cream, salt, and garlic. Whisk until well blended. Then, add in the gruyere, ½ cup of the mozzarella, and basil. Whisk to combine and set aside.
  4. Heat an 8-inch oven safe pan over medium heat. Add oil and spread around pan. Then add shredded potatoes and fry without touching for 2 minutes, or until golden brown. Flip and fry until potatoes are all golden brown and crispy. Spread potatoes in an even layer in pan (Season with salt and black pepper, if desired).
  5. Mix egg mixture one last time and pour directly on top of fried potatoes in pan. Let frittata sit on heat until the outer edges slightly cook, about 1 minute. Carefully place tomato slices on top spreading evenly on frittata, trying not to let tomatoes sink into egg mixture.
  6. Place frittata into the oven and bake for 12 minutes. Take out of oven and sprinkle remaining ¼ cup mozzarella evenly around tomatoes. Bake for another 3 minutes, or until eggs are puffed and the center jiggles slightly when gently shimmied.
  7. Take out of oven and set aside to cool for 3-5 minutes. You can garnish the frittata with more basil. Slice and serve right away!

Notes:

• If using a stainless steel pan make sure to add extra oil so your frittata does not stick to the pan and will be easier for serving. • Baking times may vary depending on oven between 7-15 minutes. So, make sure to keep an eye on your frittata!
